Chicken & Biscuit Pot Pie

This is one of his favorite dishes that I made for him. It's pretty obvious when he likes something - he devours it. He used to get excited when he saw the crust batter chilling in the fridge because he knew what he was having for dinner that night. Him and his obsession with savory pies.. :) This is a great comfort food during the cold winter months. We usually ate it in bed watching movies. Good times.


Ingredients:

Filling
1 large boneless chicken breast
frozen vegetable mix (carrots, peas, green beans, corn..)
1 can of condensed cream of chicken soup
2 cloves of garlic
1 small onion
salt/pepper
1 tsp. parsley
1/2 tsp. oregano
1/3 cup milk

Pie Crust
1 cup flour
1/4 tsp. baking powder
1/4 tsp. salt
1 tbs. butter
1 egg
1 tbs. vegetable oil
1/2 cup milk

  1. To make the dough, mix flour, baking powder, and salt in a bowl. Add the butter and mix it in until the butter clumps are small.
  2. In a separate bowl, mix egg, milk, and vegetable oil.
  3. Slowly add the wet ingredients into the flour mixture and stir until it makes a thick batter.
  4. Put it in the fridge for 1 hour.
  5. To make the filling, cut the chicken into 1/2 inch cubes. Slice the onions into about the same size.
  6. Mince the garlic and put it into a hot skillet with oil.
  7. When the garlic starts to sizzle, add chicken. Salt and pepper the chicken and stir until cooked.
  8. Add the frozen vegetables and onion.
  9. Add the cream of chicken and a little bit of water.
  10. Add the milk and stir. Bring it to a boil. Add parsley and oregano.
  11. When it has the consistency of a stew, take it off the heat and pour it into a small baking pan. Distribute evenly.
  12. take the batter from the fridge and spoon them on top of the chicken stew. Evenly distribute without mixing it in with the stew.
  13. bake until the crust is golden brown (about 15 min) at 450 degrees.
  14. Take it out of the oven and let it cool a little bit before serving.
